This coffee comes from Huehuetenango (affectionately known as “way-way”). This region of Guatemala is well-known for its high altitude and consistent weather patterns. The region is right near the border with Mexico and is one of the highest altitude growing regions in the country. The meeting of hot air from the Plains of Tehuantepec in Mexico and cold air from the Cuchumantanes Mountains creates a microclimate that keeps frost in check, enabling coffee cultivation at and above altitudes of 2,000 meters above sea level. These conditions are perfect for producing coffee with sparkling acidity and fruitiness. Cool climates restrict the speed at which the coffee cherries ripen, creating a dense coffee seed. The slowly matured coffee produces a complex and balanced flavour profile with high acidity and sweetness.

Freshly picked coffee cherries are pulped and then dry fermented for 60 hours. This dry fermentation accentuates the fruity characteristic of the coffee. The fermented parchment coffee is then rinsed, sun dried on a patio and finished in a mechanical dryer.

This process enables the rich and sweet flavour characteristics of coffees grown in Huehuetenango to shine.
